I've probably said this before and you can count on me saying it again; I'll eat anything that involves goat cheese. I saw this recipe for strawberry, quinoa, + chopped spinach salad on my new fav food blog Cookie + Kate (same place I got that scrumptious baked falafel recipe) and had a feeling it would be an instant new favorite. The recipe is quite simple and the only cooking required is the quinoa (which I somehow I managed to burn). Regardless, all of the flavors and textures came together splendidly--think crunchy toasted pecans, melted goat cheese, and fresh strawberry--not to mention the added bonus of protein-packed quinoa. If your mouth is watering in the slightest I think that's a sign you should take a stab at this summery salad!
